::GASP:: We Eat Leftovers
Every mom knows the magic of left overs. This is why I spend my Sunday afternoons and evenings in the kitchen. Don’t get me wrong, it definitely goes under the “me time” category in my eyes. I love cooking and enjoy making meals that my whole family enjoys, but by the time everyone is home after school, work, and various after school activities I just do not have the time to prepare a fresh meal from scratch. I take full advantage of the slow cooker but I find a real catharsis in cooking and the slow cooker kind of steals that from me. So I spend my Sundays cooking up a storm. With my glass of wine, the DVR catching me up on what I missed the previous week and the kids playing in the next room I am at peace.
As a family we make the weekly menu, choosing from staples that I make all the time and know by heart and a variety of recipes almost always found on Pinterest. And in order to feed our family of 4 (3 of which are boys with hearty appetites) I almost always double the recipe. I also have a tendency to eyeball measurements and change it up a bit as I go. By doubling the recipe i am sure have enough to feed us all twice plus at least one meal in the freezer (another busy mom lifesaver). This week we are having Beef Tips over rice, slow cooker Bourbon Chicken with roasted potatoes, and Taco Pasta.
I cooked the beef tips, rice and bourbon chicken today and we are eating the beef and rice for dinner tonight. Tomorrow I will roast the potatoes when I get home and reheat the chicken. Tuesday I will pull ground beef with taco seasoning out the freezer, boil noodles and mix it all up to make the quick and easy taco pasta. Then for the rest of the week everyone can choose any of these three meals to eat for dinner, easy peasy. While it may not be best for everyone, it works for us and i hope this will make family dinner time a little easier for at least one of you out there.
